People are always asking me this question and I typically say, "A week!" I need to rethink that answer. Don't be ridiculous. These cookies don't ever hang around long enough to actually go stale, but I have never put it to the REAL test. When I returned to my office after Christmas, I found a couple of cookies that didn't make it to their destinations before we left for the holidays, and they were sitting on my conference table. Right as I started to throw them in the trash, that same old question resonated in my head.  These cookies were baked the week of December 10 and were left in my office from December 15 until now. They were sealed in the bags using the heat sealer we all love so no air was getting to them. I noticed that the red color eventually bled a little into the white brim of the hat and one eye was squished. Just before raking them into the trash, I decided to open one and taste a little crumb just to see (in the interest of science, of course) just HOW stale they were.

Wow! I have a lot that has been going on the past few weeks and I am just now catching up. Every day I get at least a dozen messages asking me to trouble-shoot and I am happy to try and help you figure out why your dough (or frosting) is misbehaving. I am so excited that everyone wants to indulge this passion. We have found our tribe! First, the video! Even though I had very little to do with the production of it, people still ask me questions I have no idea how to answer. I am better at figuring out your dough mishap than why your payment didn't process. I have to ask the professionals that so please bear with me if it takes a couple of days to figure it out. To all of the cookie lovers who have sent such kind words about the video, THANK YOU! This world would be nicer if we saw ourselves through someone else's eyes. I have found that you all are far more forgiving of my fat, my wrinkles, my pathetic attempts at humor and my twangy southern drawl than I am of myself. If not, you are certainly more polite about it than I am to myself. THANK YOU! I get so excited when somebody is proud of the cookies they have baked after learning a basic few tips and a reliable recipe. Please continue to post your homework pictures out there on the facebook page for others to see because you will find that our tribe is so kind and encouraging to each other. We celebrate your beautiful, sugary artwork and we also share ideas and designs with each other. We will also laugh with you if you have a great story about a lesson you learned the hard way!Wow! Last Sunday's tutorial was the Nativity cookies. Gosh they were fun to create. They have lots of colors and they take a while to produce but you wouldn't want to make 100 dozen of them or anything. The set of cutters costs $12 and includes a standing figure, kneeling figure, camel, sheep, manger, Angel of the Lord and Star of Bethlehem. I bought my limit. More than half have been claimed but if you still want a set, you can get them while they last. When I run out I won't be able to get anymore until next year. I am not artistic enough to draw all those details with frosting so I had the aid of an art teacher friend. She used food writers to mark on the cookies and all I did was basically color in the lines. It was so easy for me but I think I could do it again just by following the lines Polly drew for me the first time.

My mama was a big believer in the Airbake cookie pans. She probably baked a half million cookies on them. But, I, on the other hand, have baked a million cookies on something else. I prefer a baking stone. Evolving as a baker you come to appreciate some things more than others, and my baking surface is certainly one of them. The picture above represents the same dough, the same oven, the same temperature, and the same baking time. The only variable is the baking surface. I prefer a baking stone because I want the back of my cookies to look like the front. In the photo, the first cookie in each row shows the top of the cookie and the other two cookies show the back. I haven't baked anything on metal in decades, I just tell people why I bake on a stone. But, the teacher in me was feeling kind of science fair-ish last night so I set up a stone and a pan with cookies, declared my hypothesis and commenced baking employing the scientific method. I really think if more science fair projects involved butter and sugar, people would like them more. Using a metal surface made me want to space them two inches apart for some reason. Intellectually, I knew they wouldn't spread but old habits are apparently hard to break. When I got them out of the oven and tried to lift them with a spatula, I broke a leg off of every one of them. Oh SNAP! Time to replicate this experiment. This time, I baked them on metal with parchment paper. Those guys are pictured above. You can see that baking on metal makes the cookies a little darker but you could argue that you just need less baking time. So do it. If you like metal, bake on it. Just know that metal is a fabulous conductor of heat but it makes no promises to heat evenly. So you could get wide variation of done-ness based on where it was located on the pan. Also, even if you are baking on a stone you can get one side of the stone hotter than the other side just by positioning it too close to the metal oven walls. I usually bake more than one stone at a time and actually, two stones would fit, but both would touch the oven walls. I position my stones on 2 different racks, at least 2" away from the oven wall. So, what are you baking on? If you get the results you like, then you have no need to change. But, if you get some cookies too dark while others aren't quite done, investigate how you can achieve a different result with a baking stone.
